Texan Shepherd's Pie (Scd)
- 1 head cauliflower (cooked then mashed to "mashed potato" texture)
- 3 large carrots (chopped up in small piece to speed up cooking)
- 1 white onion, chopped
- 2 stalks celery, chopped
- 1 lb ground beef
- 1 cup beef stock
- chili powder (lots!)
- oregano (fresh is the best)
- salt
- pepper
- parsley
- Preheat oven to 350F.
- Throw in chopped up carrots and cauliflower into a pot of boiling water.
- Cook till soft.
- Cook ground beef in beef broth.
- When beef if almost cooked, add onions, celery, fresh oregano, chili powder, salt, pepper.
- Let them saute with the beef till beef is fully cooked.
- Add more spices if desired!
- Drain cauliflower and carrots, leaving a little bit of water in the pot with it to help the mashing.
- If desired, add butter and salt to the mashed mixture.
- Get out a 9X9X3 casserole baking dish, first add the ground beef mixture at the bottom then spread over the cauliflower/carrot mash.
- Bake covered for 1/2 hour.
- YUM!
