'V' Trout and Parma ham

  1. preheat oven to 180C/350F
  2. Lay 2 slices of Parma ham horizontally on a surface, slightly overlapping , then place a sage leaf in the middle.
  3. Lay one trout fillet vertically in middle to form a cross shape.
  4. Pop a second sage leaf and a knob of butter on top of fish.
  5. Roll the ham around the fillet, leaving the ends hanging out and secure with a wooden skewer.Repeat the process with second fillet.
  6. Place the trout parcels snugly in an oven dish and bake for 15/20 minutes.
  7. Remove the fish from the oven and sprinkle over the parsley and s squeeze of lemon.
  8. Serve the trout with the remaining buttery sauce from the oven dish.
  9. Boy I'm so hungry after writng this .
