Special Sweet Soup Udon
- 3 hanks Udon
- 1 Green onions
- 3 Egg
- 80 ml Mirin
- 30 ml Sake
- 50 ml Dashi stock
- 20 grams Brown sugar crystals
- 80 ml Soy sauce
- Put just the sake and mirin in a pot and cook off the alcohol.
- Be careful of the jumping flames.
- Add the sugar crystals, dashi soup, and soy sauce and simmer for 3 minutes.
- After 3 minutes, transfer to a container.
- Make the hot spring eggs.
- Bring the eggs to room temperature.
- Bring water to a boil in a pot, turn off the heat, then add the eggs to the water.
- Let sit for 15 minutes.
- Cut the onions.
- If you cut them diagonally, they look better.
- Boil the udon in water, then rinse well with cold water.
- Transfer the udon to a bowl, then top with a generous amount of the soup.
- Garnish with the chopped onions.
- Make a well in the center, then break open a hot spring egg into the well.
- The sweet-salty udon is ready.
