Asian Style Carrot Dressed Salad

  1. ARRANGE the lettuce, chicken, snow peas and spring onions on a serving platter or in individual bowls.
  2. Set aside.
  3. COMBINE the carrot, ginger, shallot, vinegar, VEGEMITE and sesame oil in a food processor and process until minced.
  4. With the motor running add the peanut oil (blend if a finer texture is desired).
  5. Drizzle lettuce with dressing and then sprinkle with peanuts and coriander.
  6. Serve immediately.
