Asian Style Carrot Dressed Salad
- 1 iceberg lettuce, trimmed and cut into 8 wedges
- 500 g shredded cooked chicken or cooked prawns
- 150 g snow peas, blanched
- 2-3 spring onions, trimmed and finely sliced diagonally
- 3 carrots, peeled and chopped
- 1/4 cup peeled and chopped root ginger
- 1 large shallot, peeled and chopped
- 1/4 cup seasoned rice vinegar
- 1 tablespoon VEGEMITE
- 1 tablespoon sesame oil
- 1/2 cup peanut oil
- 1/4 cup water

- coriander leaves, for serving
- ARRANGE the lettuce, chicken, snow peas and spring onions on a serving platter or in individual bowls.
- Set aside.
- COMBINE the carrot, ginger, shallot, vinegar, VEGEMITE and sesame oil in a food processor and process until minced.
- With the motor running add the peanut oil (blend if a finer texture is desired).
- Drizzle lettuce with dressing and then sprinkle with peanuts and coriander.
- Serve immediately.
