Falafel Sandwich

  1. Process first 6 ingredients and half the cilantro in food processor until smooth.
  2. Shape into 24 (2-inch) patties, using about 2-1/2 Tbsp.
  3. chickpea mixture for each.
  4. Place in single layer on baking sheet.
  5. Refrigerate 15 min.
  6. Meanwhile, mix sour cream, tahini and lemon juice until well blended.
  7. Combine cucumbers, tomatoes, remaining cilantro and dressing in separate bowl.
  8. Refrigerate both until ready to use.
  9. Heat 1 Tbsp.
  10. oil in large nonstick skillet on medium heat.
  11. Add half the falafel patties; cook 3 min.
  12. on each side or until browned on both sides.
  13. Remove from heat; cover to keep warm.
  14. Repeat with remaining oil and patties.
  15. Top each pita with 3 falafel patties, sour cream mixture and cucumber mixture.
