BBQ Pork Minis with Tomatillo Salsa
- Tomatillo Salsa
- 1-1/2 cups KRAFT Zesty Italian Dressing
- 1-1/2 cups tomatoes, medium dice
- 1-1/2 cups tomatillos, medium dice
- 3/4 cup canned black beans, rinsed
- 3/4 cup hominy
- 3/4 cup chipotle peppers in adobo sauce, pureed
- 1/2 cup green onions, chopped
- 1/2 cup cilantro, chopped
- 3 Tbsp. poblano chiles, roasted, small dice
- 1-1/2 tsp. salt
- BBQ Pork
- 1 gal. pulled cooked pork
- 4-1/2 cups BULL'S-EYE Original Barbecue Sauce
- 36 each honey wheat sandwich rolls (3 inch), split
- Tomatillo Salsa: Combine ingredients.
- Refrigerate until ready to use.
- BBQ Pork: Cook meat and barbecue sauce in saucepan on medium-low heat until heated through, stirring frequently.
- For each serving: Cover bottom half of roll with 1/3 cup BBQ Pork; cover with 2 Tbsp.
- Tomatillo Salsa and top of roll.
