Mae's Tortilla soup
- 4 tbsp canola oil
- 1/2 cup cornmeal
- 1/4 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 medium carrot or 6 baby carrots-- chopped
- 2 stalk celery, chopped
- 1/2 tsp chili powder
- 1 add desired herbs -- basil, cilatro, etc, to taste.
- 2 med, red potatos-- chopped
- 1 small onion-- chopped
- 4 cup stock -- i use chicken
- 1 can , 10 oz tomato sauce
- 1 small can green chilies-- optional
- 1 can black beans, optional
- 2 13 oz cans chicken, optional
- add oil to cast iron skillet heat until a sprinkling of water dances
- put cornmeal in skillet, stir until meal is golden in color
- add tomato sauce + 2 cans of water
- add all veg, cook on med heat until tender
- add all spices and seasonings
- add stock, cook for 15 min
- serve hot with crispy tortilla strips
- enjoy!
