Peach Crepes With Praline Sauce
- 6 fresh peaches, peeled and sliced
- 4 tablespoons butter
- 3 tablespoons brown sugar
- 1 teaspoon cinnamon
- whipped cream, for garnish
- toasted pecan pieces, for garnish
- 4 dessert crepes
- 1 cup packed light brown sugar
- Place your pre-made crepes in foil and if needed reheat in a 325-degree oven for about 10 minutes or until warmed.
- Melt butter in a large skillet over medium heat.
- Add peaches, brown sugar, lemon juice, and cinnamon.
- Stir together and bring to a boil.
- Reduce heat and simmer for 5-7 minutes until a sauce forms and peaches are tender but not mushy.
- While that is cooking in a small saucepan over medium heat, combine brown sugar, salt and butter.
- Cook for 5 minutes, stirring constantly.
- Remove from heat, and gradually stir in half and half.
- Cook for an additional minute, continuing to stir.
- Remove from heat and stir in pecans and vanilla.
- Assemble crepes: Lay first crepe across serving platter.
- Spoon 1/2 cup of peaches across the middle of the crepe.
- Roll in half and top with 3 tbsp of praline sauce, followed by whipped cream and pecan pieces.
- Repeat with remaining crepes and serve immediately.
