Cheesy Ham and Apricot Toasts
- 24 baguette, slices (1/4 inch slices)
- 2 tablespoons stone ground dijon mustard
- 2 tablespoons mayonnaise, dressing
- 18 teaspoon chipotle-flavored hot pepper sauce (optional)
- 5 ounces sliced black forest ham, torn into bite-size pieces
- 12 cup dried apricot, sliced
- 1 cup Canadian cheddar cheese, shredded (two year old)
- 2 tablespoons green onions, finely chopped
- Preheat broiler.
- Arrange baguette slices on a rimed baking sheet.
- Broil until lightly golden on both sides, about 1 minute per side.
- Cool to room temperature.
- Blend mustard and mayonnaise; add chipotle sauce if using.
- Spread a thin layer on one side of each baguette toast.
- Divde ham and apricots equally between toasts.
- Toss cheese with green onions and sprinkle evenly over all.
- Broil 2-3 minutes or until cheese is melted.
