Baked Santa Fe Grits Recipe

  1. Grease 6 custard baking c. and place sliced pimientos in the bottom, forming an "X".
  2. Combine boiling water, grits, and salt.
  3. Microwave on High for 4 min, stirring once.
  4. Stir in grated Monterey Jack cheese, minced green chili peppers, and Large eggs; beat well.
  5. Pour into the prepared c.. Microwave on Medium for 8 min, turning once.
  6. Let stand for 2 min before unmolding, pimiento-side up.
  7. This recipe yields 5 servings.
