Baked Santa Fe Grits Recipe
- 3 ounce pimientos sliced
- 1 2/3 c. boiling water
- 1/2 c. grits
- 1/4 tsp salt
- 1 c. grated Monterey Jack cheese
- 2 Tbsp. minced green chili peppers
- 2 x Large eggs
- Grease 6 custard baking c. and place sliced pimientos in the bottom, forming an "X".
- Combine boiling water, grits, and salt.
- Microwave on High for 4 min, stirring once.
- Stir in grated Monterey Jack cheese, minced green chili peppers, and Large eggs; beat well.
- Pour into the prepared c.. Microwave on Medium for 8 min, turning once.
- Let stand for 2 min before unmolding, pimiento-side up.
- This recipe yields 5 servings.
