Asparagus Ala Muah!
- 1 bunch asparagus
- 2 tablespoons olive oil
- salt and pepper
- 2 tablespoons butter
- 4 shallots, chopped
- 2 cups mushrooms, any kind, sliced
- Wash and trim the asparagus ends.
- Dice into 1 1/2 inch pieces.
- Place in a bowl and lightly coat with Olive oil and season with salt and pepper, toss to coat.
- place on foil baking pan.
- Roast in oven at 450 until tender or to your liking.
- White that is roasting, in a saucepan.
- Heat butter, add shallots and mushrooms.
- Season lightly with a dash of salt.
- Combine the two together in a serving dish.
- And serve.
