Mesqite Smoked Garlic Sausage
- each 3 1/2 pounds pork butt
- 1/2 lb bacon
- 1 tbsp salt
- 1/2 cup brandy
- 1/2 cup garlic. (Might want to roast it first to mellow the flavor.)
- 1 tbsp smoked paprika
- 1 tbsp white pepper
- 3 each bay leaf
- 1 tsp oregano
- 1 tsp thyme
- 1 tbsp mesquite smoke powder
- 1 bunch green onions
- This is like my jalapeno cheese sausage.
- Grind your meats.
- Everything else goes in the cuisinart.
- Mix it all together.
- Refrigerate overnight, stirring occasionally, for the flavors to meld.
- Stuff 'em.
