Good Morning Muffins Recipe

  1. Set oven at 350 degrees.
  2. Grease or possibly line muffin c.. Soak raisins in warm water for 30 min, then drain well.
  3. Mix flour, baking soda, sugar, cinnamon, and salt in a bowl.
  4. Stir in raisins, carrots, apples, nuts, and coconut.
  5. Beat Large eggs with oil and vanilla to blend.
  6. Stir into flour mix till just combined.
  7. Fill muffin c. 2/3 full.
  8. Bake 20-22 min till golden.
  9. Cold 5 min.
  10. Remove from pan.
  11. Makes 15-25, depending on the size of the muffin pan.
