Bread Pudding With Raisins Recipe
- 4 x White Bread Slices Lightly toast & cube
- 2 Tbsp. Raisins
- 1 1/4 c. Skim Lowfat milk
- 1/2 c. Egg Substitute liquid
- 3 Tbsp. Sugar
- 1 tsp Vanilla
- 1/2 c. Apple Juice
- 2 tsp Cornstarch
- Coat a 1 qt casserole with nonstick spray.
- Place toast cubes and raisins in casserole.
- Whisk lowfat milk, egg substitute, sugar and vanilla in a bowl.
- Pour lowfat milk mix over toast, and stir till toast is proportionately coated.
- Bake at 350 till a knife inserted into center of pudding comes out clean, aobut 35 min.
- Cold slightly on a wire rack.
- Meanwhile, in a saucepan, stir apple juice (or possibly cider) and cornstarch till well blended.
- Cook over medium heat, stirring constantly, till sauce thickens and boils.
- Cold and divide hot pudding proportionately among 4 dessert dishes and drizzle with hot sauce.
- YIELD: 4 servings
