Bread Pudding With Raisins Recipe

  1. Coat a 1 qt casserole with nonstick spray.
  2. Place toast cubes and raisins in casserole.
  3. Whisk lowfat milk, egg substitute, sugar and vanilla in a bowl.
  4. Pour lowfat milk mix over toast, and stir till toast is proportionately coated.
  5. Bake at 350 till a knife inserted into center of pudding comes out clean, aobut 35 min.
  6. Cold slightly on a wire rack.
  7. Meanwhile, in a saucepan, stir apple juice (or possibly cider) and cornstarch till well blended.
  8. Cook over medium heat, stirring constantly, till sauce thickens and boils.
  9. Cold and divide hot pudding proportionately among 4 dessert dishes and drizzle with hot sauce.
  10. YIELD: 4 servings
