Asparagus, Orange, And Endive Salad Recipe
- 2 1/2 c. diagonally-sliced asparagus
- 2 c. torn endive leaves
- 2 sm oranges peeled, and sliced into rings
- 1 sm red onion very thinly sliced
- 1/3 c. raspberry vinegar
- 2 Tbsp. canola oil
- 1 Tbsp. orange juice
- 1 Tbsp. sugar Salt to taste Freshly-grnd black pepper to taste
- To a large pot of boiling water, add in the asparagus.
- Blanch for 1 minute.
- Drain and plunge asparagus into a bowl of cool water.
- Drain again.
- Dry the asparagus.
- Combine the liquid removed asparagus with the endive, oranges, and red onion.
- Whisk together the dressing ingredients.
- Add in dressing to the asparagus endive mix.
- Toss well and serve.
- This recipe yields 6 servings.
- Serving size: 1 c..
