Avocado Pico de Gallo
- 2 medium ripe avocados
- 2 plum tomatoes
- 1 jalapeno chile
- 13 c. chopped sweet onion
- 1/4 c. fresh cilantro leaves
- 2 tbsp. fresh lime juice
- 1/2 tsp. kosher salt
- Jicama and carrot slices (optional)
- In bowl, combine avocados, tomatoes, jalapeno, onion, cilantro, lime juice, and 1/2 teaspoon salt.
- Store covered in the refrigerator up to 4 hours.
- Serve with jicama and carrot slices if you like.Nutritional information is based on a 1/4-cup serving.
