Spring Lettuce Salad

  1. Mix together the honey, ginger, lime zest and juice.
  2. Whisk into the olive oil.
  3. Season to taste.
  4. Set aside.
  5. Select the prettiest of the lettuce leaves and place in a large mixing bowl with the fresh herbs.
  6. Just before serving, re-whisk the dressing and pour over the leaves.
  7. Mix gently before adding the flowers.
  8. Serve on individual plates, arranged in airy layers.
