Spring Lettuce Salad
- 2 tsp. honey
- 1 tsp. finely minced fresh ginger
- 1 lime, finely grated and juiced
- 4 tbsp. extra-virgin olive oil,
- less
- Seasonings, to taste
- 8-1/2 oz. mixed baby lettuces
- 1 bunch chives, roughly snipped
- 1/2 cup mint leaves
- 1/2 cup flat parsley leaves
- 1 cup edible flowers
- Mix together the honey, ginger, lime zest and juice.
- Whisk into the olive oil.
- Season to taste.
- Set aside.
- Select the prettiest of the lettuce leaves and place in a large mixing bowl with the fresh herbs.
- Just before serving, re-whisk the dressing and pour over the leaves.
- Mix gently before adding the flowers.
- Serve on individual plates, arranged in airy layers.
