Peppers and Eggs Sandwich
- 4 eggs
- 2 green bell peppers, cut into strips
- 12 onion, sliced thinly
- salt and pepper
- 1 tablespoon olive oil
- 4 Italian rolls
- Heat olive oil in large frying pan.
- Add peppers, saute until almost limp, then add onions.
- Cook for another 5 minutes or so.
- Beat eggs, seasoning to taste with salt and pepper.
- Add eggs to pan on top of peppers and onions.
- Once eggs start to set up on the bottom, tip pan and with spatula lift a section at a time to allow uncooked egg to seep underneath cooked part.
- Do this until top is set but not completely cooked.
- Turn omelette over and finish cooking.
- Cut omelette in pieces and put in Italian rolls (will make 4 sandwiches).
