Maui Bistro Sweet Potato Salad

  1. Toss potatoes with oil; season with salt and pepper.
  2. Place in parchment paper-lined full-sheet pan (or in lined half-sheet pan for trial recipe).
  3. Bake in 350 degrees F-convection oven 10 to 12 min.
  4. or until potatoes are tender.
  5. Cool completely.
  6. Place potatoes in large bowl.
  7. Add remaining ingredients; mix lightly.
  8. Cover.
  9. Refrigerate several hours or until chilled.
