Cauliflower Smash Up
- 1 1/2 lb potatoes
- 1/2 head cauliflower
- 1/2 cup milk
- 2 tbsp butter
- 3/4 cup shredded cheese ( I use 5 Italian cheese blend from the grocery store)
- 1/4 - 1/2 tsp granulated garlic to taste
- 1/4 - 1/2 tsp black pepper to taste
- 1 I also add 1 tbsp Brady Street Cheese Sprinkle from Penzey's Spices, but I'm sure there are other spices you could use. It is made of salt, garlic, parsley, basil, green pepper corn, salt, & Romano cheese.
- In a pot on high heat, bring salted water to a boil.
- Quarter potatoes and peel if desired.
- Add potatoes to the boiling water.
- Chop or break the cauliiflower into florets and add to the pot on top of the potatoes.
- After 8 -10 minutes (or when cauliflower is knife tender), remove the cauliflower and set aside in a bowl.
- After another 5-7 minutes (when potatoes are knife tender), turn the heat to low and drain off the excess water.
- Add the cauliflower, milk, butter, garlic, pepper, and Brady Street Sprinkle (or substitute) to the pot with the potatoes.
- Mash to your preferred consistancy.
- (I prefer mine slightly chunky), then stir in the cheese.
- Serve while hot and enjoy the fact that you tricked them into eating more veggies!
