Cobb Salad

  1. Line 4 plates with spinach.
  2. Tear lettuce into bite sized pieces and top spinach.
  3. Arrange blue cheese, chicken, avocado, and bacon on top of greens.
  4. Peel and quarter eggs.
  5. Place 2 wedges on each plate.
  6. In a small bowl, combine lemon juice, salt and pepper.
  7. Whisk in oil.
  8. Pour dressing over salad and serve.
