Cobb Salad
- 2 eggs, boiled
- 4 slices bacon, cooked
- 10 ounces fresh spinach
- 1 small head leaf lettuce
- 14 cup crumbled blue cheese
- 1 12 cups cooked chicken, shredded
- 1 avocado, sliced
- 1 tablespoon lemon juice
- 18 teaspoon salt
- 18 teaspoon pepper
- 14 cup olive oil
- Line 4 plates with spinach.
- Tear lettuce into bite sized pieces and top spinach.
- Arrange blue cheese, chicken, avocado, and bacon on top of greens.
- Peel and quarter eggs.
- Place 2 wedges on each plate.
- In a small bowl, combine lemon juice, salt and pepper.
- Whisk in oil.
- Pour dressing over salad and serve.
