Moist Northern Cornbread Gift Mix (Makes One Mix)
- 1 14 cups yellow cornmeal
- 34 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 2 12 tablespoons dry buttermilk (powdered cultured)
- 13 cup powdered milk
- 2 eggs
- 1 13 cups water
- 3 tablespoons warm melted butter
- Mix together all dry ingredients and place in a zip-loc baggie.
- Place baggie in a decorative jar or cloth bag to give as a gift.
- Be sure to include preparation instructions if you give it away!

- 1 bag of cornbread mix, 2 eggs, 1 1/3 cups water, 3 tablespoons warm melted butter.
- Preheat oven to 425 degrees F.
- Melt butter in the microwave.
- Set aside to cool.
- Place bag of cornbread mix in a 4-qt batter bowl and make a well (dig a hole in the mix) with a wooden spoon.
- Mix together milk and eggs in a second bowl.
- Pour milk mixture into the well in the dry mix.
- Stir about 10 strokes.
- Fold in warm, melted butter.
- Bake until a toothpick comes out clean or the bread is golden-brown and springs back when lightly pressed.
- Bake 20 min for a 9x9" pan or 10 min in muffin pan.
- 7 min for pre-heated cast-iron cornbread pan.
