Roasted Brussels Sprouts with Lemon Zest
- 3 pounds Brussels sprouts, trimmed and cut in half lengthwise
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons lemon zest
- Preheat the oven to 450 degrees F.
- In a shallow baking dish or roasting pan, toss the sprouts, olive oil, salt and pepper until combined.
- Roast, stirring occasionally, 15 to 18 minutes.
- Sprinkle with the lemon zest just before serving.
