Yogurt Brulee with Blueberries
- 2 cups fresh or frozen blueberries, thawed if frozen, patted dry
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2 cups fat-free vanilla yogurt
- 2 tablespoons plus 2 teaspoons light brown sugar
- Preheat the broiler.
- Put four 1-cup custard cups or ramekins on a broilerproof baking sheet.
- In a medium bowl, stir together the blueberries, cinnamon, and vanilla.
- Spoon 1/2 cup mixture into each custard cup.
- Top each with about 1/2 cup yogurt and 2 teaspoons brown sugar.
- Broil about 4 inches from the heat for 2 to 4 minutes, or until the sugar is melted and bubbly.
- Watch carefully to keep the sugar from burning.
