Italian Zucchini Soup

  1. In a Dutch oven, brown sausage with onion.
  2. Drain excess fat.
  3. Add the next 8 ingredients.
  4. Cover and simmer for 1 hour.
  5. Stir in zucchini and simmer for 10 minutes.
  6. Sprinkle with Parmesan cheese, if desired.
