Cajun Pork Chops with Sweet Potato Salad
- 2 lb. sweet potatoes
- 1/4 c. sweet Vidalia onion dressing
- 1/4 c. sour cream
- 1/2 tsp. yellow mustard
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 stalk celery
- 13 c. red bell pepper
- 2 scallions
- 4 boneless, center-cut loin pork chops
- 4 tsp. Cajun seasoning
- 1 tbsp. olive oil
- In a large saucepan, bring sweet potatoes and enough cold water to cover to a boil; boil 6 to 7 minutes, until tender.
- Drain, let cool in colander.
- In medium bowl, whisk onion dressing, sour cream, mustard, salt and pepper until blended.
- Add potatoes, celery, bell pepper and scallions; toss to coat.
- Rub both sides of each pork chop with 1 teaspoon Cajun seasoning.
- Heat oil in large skillet over medium-high heat.
- Cook chops 4 minutes per side, until cooked through.
- Serve with sweet potato salad.
