Cajun Pork Chops with Sweet Potato Salad

  1. In a large saucepan, bring sweet potatoes and enough cold water to cover to a boil; boil 6 to 7 minutes, until tender.
  2. Drain, let cool in colander.
  3. In medium bowl, whisk onion dressing, sour cream, mustard, salt and pepper until blended.
  4. Add potatoes, celery, bell pepper and scallions; toss to coat.
  5. Rub both sides of each pork chop with 1 teaspoon Cajun seasoning.
  6. Heat oil in large skillet over medium-high heat.
  7. Cook chops 4 minutes per side, until cooked through.
  8. Serve with sweet potato salad.
