Sunshines fried chicken wings
- 2 lb chicken wings (freezer dep)
- 2 cup buttermilk
- 1 1/2 cup all- purpose flour
- 1/2 cup yellow corn meal
- 1 tbsp cayenne powder
- 1/2 tsp garlic powder
- 1 tbsp cornstarch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 2 large eggs
- 10 cube of ice
- 1/2 cup milk
- 1 tsp salt (for marinating)
- 4 cup vegetable oil
- 3 cup water
- 1 ziplock bag
- thawed chicken wings, in large bowl add 3cups water, the ice and 1t-salt mix well, place in refrigerator for 30 minutes.
- take and drain water and ice from chicken wings.
- rinse the bowl clean, put wings back in to the bowl add buttermilk, place back in refrigerator covered with saran wrap.for 2 hours.
- mean while mix the flour,corn meal, cayenne powder, salt , pepper, garlic pepper and cornstarch in a zip lock bag.shack bag to mix let set untill wings are ready to fry.
- after 2 hours, drain wing from butter milk.
- in a med, size bowl beat the eggs and add the milk to the eggs, mix well.
- heat the vegetable oil in a skillet pot.or a heavy pot.heat oil to 340 degree using a thermometer.
- now ready to bread the wings, flour the wings, dip in egg mixture, back to flour mixture shack the bag, place wings into skillet and fry for 11 minutes but no longer then 13 minutes.repeat untill all wings are fried.
- when done frying place on wire rack to dip off access Greece.
