Lobster Newburg Barbarini Recipe
- 1 med. size boiled lobster, cracked and meat removed
- 1 c. cream
- 4 tbsp. butter
- 2 teaspoon flour
- Warm lowfat milk
- White pepper, to taste (dash)
- Paprika, to taste (dash)
- Salt (dash)
- 2 tbsp. sherry
- 1 tbsp. cool water
- Set lobster meat to simmer in a small double boiler with 1 c. cream.
- simmer the lobster for 1/2 hour.
- Meanwhile heat in a saucepan 4 Tbsp.
- butter.
- Stir in 2 tsp.
- flour.
- Stir in warm lowfat milk sufficient to make a smooth thick sauce.
- Cook it for 3 min, transfer lobster and sauce to a large double boiler.
- Season it with white pepper, paprika, and salt, to taste.
- Let the whole newburg simmer about 15 min then add in 2 Tbsp.
- of sherry 5 min before sending it to the table.
- Add in another dab of butter, stir it well.
- Then add in about 1 Tbsp.
- cool water just before serving.
