Lobster Newburg Barbarini Recipe

  1. Set lobster meat to simmer in a small double boiler with 1 c. cream.
  2. simmer the lobster for 1/2 hour.
  3. Meanwhile heat in a saucepan 4 Tbsp.
  4. butter.
  5. Stir in 2 tsp.
  6. flour.
  7. Stir in warm lowfat milk sufficient to make a smooth thick sauce.
  8. Cook it for 3 min, transfer lobster and sauce to a large double boiler.
  9. Season it with white pepper, paprika, and salt, to taste.
  10. Let the whole newburg simmer about 15 min then add in 2 Tbsp.
  11. of sherry 5 min before sending it to the table.
  12. Add in another dab of butter, stir it well.
  13. Then add in about 1 Tbsp.
  14. cool water just before serving.
