Sausage Cornbread Bake

  1. Heat oven to 425F Grease 10" ovenproof skillet or 2 quart baking dish.
  2. Brown sausage in medium skillet; set aside.
  3. Sautee bell pepper and onion in sausage grease until crisp-tender.
  4. Add browned sausage to pepper and onion.
  5. In large bowl, combine eggs, corn meal mix, corn, milk and oil.
  6. Pour half of corn meal mixture into greased baking dish.
  7. ; sprinkle with sausage mixture and cheese.
  8. Pour remaining corn bread batter over top.
  9. Bake at 425 F for 30-40 minutes until golden brown on top.
  10. Let stand 10 minutes before serving.
