Christmas canapes

  1. If your beetroot is raw then cook in a big pan with lots of water for a couple of hours.
  2. Drain and let them cool
  3. Get the ingredients together
  4. Peel the beetroot
  5. Slice the round bit off each side so that all the canapes will have a flat base.
  6. Cut each beet into four reasonably thick slices.
  7. Spread some pesto over each slice
  8. Place a slice of turkey breast on top
  9. Slice the tomatoes and put a slice on top.
  10. Use a caper for the finishing touch
  11. Sprinkle with chopped chives and ready to go!
