Soba-Watercress Salad

  1. Bring large pot water to a boil.
  2. Make dressing: In medium bowl, whisk together all dressing ingredients.
  3. Set aside.
  4. (Dressing can be made up to 4 days ahead and refrigerated.)
  5. Drop noodles into boiling water; stir to prevent sticking.
  6. Cook until just tender, 312 to 412 minutes.
  7. Drain and rinse with cold water.
  8. Drain again, shaking colander.
  9. Transfer to large bowl, drizzle with 2 teaspoons sesame oil and toss to coat.
  10. Add half of the reserved dressing to noodles and toss to coat.
  11. In large shallow serving bowl, combine watercress, jicama, cucumbers and scallions.
  12. Add remaining dressing and toss to coat.
  13. Push watercress salad to perimeter of bowl.
  14. Mound noodles in center of bowl.
  15. Sprinkle with sesame seeds and serve at room temperature.
