Carnitas De Pollo

  1. This recipe is tweaked from a recipe I got in a deli in Glasgow.
  2. Originally there were no onions!
  3. But onions are always better.
  4. Cook up the chicken breasts, roughly chop and then whizz in the blender to shred really small.
  5. Chop your other ingredients finely.
  6. Cook the onions, garlic and chillis in the butter.
  7. Nom nom.
  8. Then add the chicken.
  9. Everything should be soft and cooked.
  10. If in doubt, add more butter!
  11. Then add the cream cheese/sour cream and bind everything together.
  12. You know you wanna.
  13. Use to fill tamales or tortillas.
  14. Tip: I have always used chipotles in adobo sauce from a can and recommend it.
