Carnitas De Pollo
- 3 pieces Chicken Breast
- 6 whole Spring Onions (optional)
- 4 cloves Garlic
- 2 whole Chilies (Serrano, Chipotle Or Jalapeno)
- 1-78 ounces, weight Butter
- 7 ounces, weight Sour Cream Or Cream Cheese
- This recipe is tweaked from a recipe I got in a deli in Glasgow.
- Originally there were no onions!
- But onions are always better.
- Cook up the chicken breasts, roughly chop and then whizz in the blender to shred really small.
- Chop your other ingredients finely.
- Cook the onions, garlic and chillis in the butter.
- Nom nom.
- Then add the chicken.
- Everything should be soft and cooked.
- If in doubt, add more butter!
- Then add the cream cheese/sour cream and bind everything together.
- You know you wanna.
- Use to fill tamales or tortillas.
- Tip: I have always used chipotles in adobo sauce from a can and recommend it.
