Barth's At The Bridge German Potato Salad Recipe
- 3 lbs. salad potatoes
- 1/4 pound bacon, diced
- 3 tbsp. bacon drippings
- 1/4 c. + 1 tbsp. flour
- 3/4 c. sugar
- 1/2 c. vinegar
- 2 1/2 c. water
- 2 teaspoon salt
- 2 tbsp. grated onion
- Cook potatoes in covered saucepan till tender.
- Peel and slice in potatoes while warm.
- Brown bacon in skillet.
- Add in flour and sugar to bacon and bacon drippings.
- Add in remaining ingredients, cook till thickened, stirring constantly.
- Combine potatoes with dressing and stir gently.
- Makes 8 to 10 servings.
