Baked Oatmeal-Crusted Tilapia with Lemon Mayonnaise

  2. Heat oven to 350 degrees.

  4. Line a baking sheet with parchment paper or a silicone liner.
  5. Defrost/rinse fish and pat dry.
  6. Place fish fillets on the baking sheet.

  8. In a bowl, mix together oats, bread crumbs, grated Parmesan, chives, parsley, salt and pepper.
  9. Mix thoroughly.
  10. In a separate bowl, measure out the mayonnaise before adding lemon rind and juice.
  11. Stir.

  13. Brush tops of fish with mayonnaise, then top with the dry coating.
  14. You may feel the desire to scrimp on the mayo or feel anxious about how the texture will bake.
  15. Dont and dont be!
  16. The mayo melds with the coating of dry materials and thickens, creating a creamy texture.
  17. It barely tastes of mayo.
  18. Dont go overboard with the mayo, but dont underestimate its role in the success of this dish.
  19. If youre not a fan of mayonnaise, Ive read that sour cream and/or plain-flavored yogurt are excellent substitutions.

  21. Bake for 15-20 minutes or until fish flakes when forked.
  22. Serve over the pasta of your choice or with vegetables.
