Santa Maria-Style Barbecue

  1. Combine first 5 ingredients in a large bowl.
  2. Add meat; marinate for several hours.
  3. Heat girll.
  4. Wipe excess marinade from meat.
  5. Apply meat seasoning (1/2 teaspoons salt, 1/2 teaspoons pepper, 1/2 teaspoons meat seasoning-McCormick or Susie Q's).
  6. Grill steak over medium until cooked to taste, usually 25 to 30 minutes.
  7. (For medium-rare, the temp should be 145 degrees).
  8. Let meat rest for 5 to 10 minutes.
  9. Slice very thin.
