Southwestern Rice Dish
- 1 23 cups rice
- 3 13 cups water
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 tablespoon olive oil
- 1 (15 ounce) garbanzo beans (rinsed and drained) or 1 (15 ounce) chickpeas (rinsed and drained)
- 2 cups shredded cheddar cheese
- 1 cup ricotta cheese
- 14 cup sour cream
- 1 12 teaspoons chili powder
- 1 cup salsa
- Cook rice in water til tender.
- Saute next 4 ingredients til tender.
- Add rice to beans.
- In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa.
- Spoon 1/2 of rice mixture in a greased 9x13" pan.
- Layer with cheese and salsa mixture.
- Repeat layers.
- Bake uncovered at 350 degrees for 25 minutes.
- Sprinkle with remaining cheese and bake 5 more minutes.
