Potato, Leek and Prosciutto Salad

  1. Boil or steam potatoes until tender.
  2. Drain and cool.
  3. Heat a large frypan and cook proscuitto until crisp, roughly chop.
  4. Move to the side of the pan.
  5. Add leek and saute until translucent, do not brown.
  6. Arrange rocket leaves, potato, proscuitto, leek and sundried tomatoes.
  7. Drizzle with dressing.
