Potato, Leek and Prosciutto Salad
- 500g Desiree potatoes, quartered
- 1 leek, sliced thinly
- 100g thinly sliced prosciutto
- 100g rocket leaves
- 100g semi-dried tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 1/3 cup KRAFT Balsamic Italian Dressing
- Boil or steam potatoes until tender.
- Drain and cool.
- Heat a large frypan and cook proscuitto until crisp, roughly chop.
- Move to the side of the pan.
- Add leek and saute until translucent, do not brown.
- Arrange rocket leaves, potato, proscuitto, leek and sundried tomatoes.
- Drizzle with dressing.
