Rice And Beef Deroma
- 1 lb. ground meat
- 1/2 c. chopped onion
- 1/4 c. diced green pepper
- 1 garlic clove, minced
- 1 tsp. salt
- 1 tsp. parsley flakes
- 1/2 tsp. oregano flakes
- 1/2 tsp. basil leaves
- 1/4 tsp. black pepper
- 1 (8 oz.) can tomato sauce
- 1 (1 lb.) can stewed tomatoes
- 3 c. cooked rice
- 1 lb. Ricotta
- 1/3 c. Parmesan cheese
- Salt and pepper pieces of top round steak, cut thin.*
- Add sliced onion; roll meat to cover.
- Add 1/2 slice bacon spread with mustard and roll meat to cover.
- Continue to roll meat up and secure with toothpick, inserted horizontally.
- Brown all sides in butter.
- Add a very small amount of water; cover and lower heat to simmer until tender.
- (I use a heavy Dutch oven and cook about 2 hours.)
- Make a basic white sauce.
- Remove beef from pan to serving dish; add sauce to gravy, cooking just enough to mix. Pour over the rolls of beef and serve.
