Pineapple Scotchies

  1. Preheat oven to 375 degrees F.
  2. Grease a 9-inch square baking pan.
  3. In a medium saucepan combine pineapple, sugar and jam and bring to a boil over medium heat, stirring occasionally.
  4. Let cool.
  5. In a food processor combine first 5 ingredients (flour - baking soda), and mix until crumbly using on/off turns.
  6. Sprinkle half of the flour mixture in the prepared pan.
  7. Pour pineapple filling over oat/flour mixture.
  8. Spread remaining oat/flour mixture over pineapple filling.
  9. Pat down gently.
  10. Bake for 35-40 minutes.
  11. Cool to room temperature and then cover with plastic wrap and let stand at room temperature overnight.
  12. Cut into bars to serve.
