Brown Rice Tofu Cream Gratin

  1. Finely chop the tofu, put it in a heatproof container and heat in the microwave for 3 minutes.
  2. Toss out any water that is produced.
  3. Combine the tofu and soy milk in a food processor and blend for 3 minutes.
  4. Stir-fry the vegetables and mushrooms and pour the tofu cream sauce over the top.
  5. Season with garlic, salt, and pepper.
  6. Fill bottom of a gratin dish with the cooked brown rice and pour the sauce over the top to finish.
  7. Sprinkle on some panko and toast in a toaster oven until golden for extra flavour.
