Brown Rice Tofu Cream Gratin
- 120 grams Cooked brown rice
- 1 as much (to taste) Mushrooms & vegetables
- 100 grams Firm tofu
- 1 Garlic powder or grated garlic
- 200 ml Non-additive, unsweetened soy milk
- 1 Salt and pepper
- 1 generous pinch Panko (optional)
- Finely chop the tofu, put it in a heatproof container and heat in the microwave for 3 minutes.
- Toss out any water that is produced.
- Combine the tofu and soy milk in a food processor and blend for 3 minutes.
- Stir-fry the vegetables and mushrooms and pour the tofu cream sauce over the top.
- Season with garlic, salt, and pepper.
- Fill bottom of a gratin dish with the cooked brown rice and pour the sauce over the top to finish.
- Sprinkle on some panko and toast in a toaster oven until golden for extra flavour.
