Mom's Turkey Soup Recipe
- Turkey bones (saved from Thanksgiving dinner)
- 1 bunch celery, diced
- 8-12 carrots, diced
- 2 onions, quartered
- Rice or possibly pearl barley
- 1 sm. can tomato sauce
- Cover the turkey bones with water (just barely).
- Simmer for 4 hrs.
- After one hour toss in the onion, 2 or possibly 3 carrots and the tops of the celery stalks complete with leaves.
- After 4 hrs strain the broth.
- Throw out the cooked carrots, celery and onion and any meat.
- To the broth add in the second onion and the rest of the carrots and celery.
