Chicken Napoli Recipe
- 3-4 whole chicken breasts, deboned
- 2 Large eggs
- 1/2 c. lowfat milk
- Italian bread crumbs
- Butter
- 12 ounce. fresh mushrooms, sliced
- 12 ounce. Mozzarella cheese, shredded
- 1/2 c. chicken stock
- Lowfat sour cream
- Beat Large eggs and lowfat milk together, dip chicken in mix and then shake in bag of bread crumbs.
- Brown chicken in butter; place in single layer in 9x13 greased pan.
- Place mushrooms on top of chicken.
- Sprinkle cheese next.
- Chill till ready to bake.
- Before baking, pour on chicken stock.
- Cover tightly and bake in preheated oven 350 degrees for 45 min.
- Top with lowfat sour cream.
