Killer Carne Asada Tacos
- 5 cloves Garlic, Chopped
- 1 whole Jalapeno, Finely Chopped
- 1/2 cups Fresh Cilantro, Chopped
- 1 dash Salt And Pepper
- 2 whole Limes, Juiced
- 1 whole Orange, Juiced
- 2 Tablespoons White Vinegar
- 1/2 cups Olive Oil
- 1 whole Lime, Zested
- 1/4 pounds Skirt/flank Steak
- 8 whole Corn Tortillas, Heated
- Optional Taco Garnishes: Lettuce, Cheese, Sour Cream, Chopped Cilantro, Salsa, Etc
- Mash together the garlic, jalapeno, cilantro, salt, and pepper; this can be done by either using the back of a knife and crushing ingredients on a cutting board, or by mashing in a bowl.
- Put the mixture in a sealable container; a reused glass jar works wonders.
- Pour in the orange and lime juices, white vinegar, oil, and lime zest.
- Secure the lid onto the container, and shake, shake, shake it up!
- Pour 1/4 of the marinade on the bottom of a glass baking dish, then lay the carne asada meat on top, flat.
- Pour the rest of the marinade mixture over the meat, cover dish with plastic wrap and put in the fridge for 1-4 hours.
- Heat up the BBQ grill**, and throw the marinated meat onto the grill for about 7 minutes on medium heat.
- No need to turn it, it cooks fast.
- When done, remove from heat and let meat rest for about 5 minutes.
- Then make thin slices, on the angle, and go back the other way to dice meat into squares.
- Assemble tacos to your liking (tortilla, meat and your favorite taco garnishes), and serve with a nice, cold Mexican cerveza.
- **Little Yellow Note: you dont have to use a BBQ grill an indoor grill or even skillet will work just fine.
