Green Gelatin Salad
- 2 small (3 oz.) lime gelatin
- 1 small can crushed pineapple (8 oz.)
- 1 Philadelphia cream cheese (8 oz.), softened
- 16 large marshmallows
- 1 c. pecans, chopped
- 1 small carton whipping cream
- Prepare gelatin according to package instructions.
- Chill until beginning to get firm (about 1 hour).
- Do not allow it to get completely firm.
- Drain juice from pineapple into small saucepan.
- Add marshmallows and melt completely in juice.
- Mash cream cheese with a fork in a large bowl.
- Add marshmallows and pineapple juice.
- Add pineapple and mix thoroughly.
- Add pecans. Whip cream until it begins to thicken, then add gelatin and whipped cream.
- Mix together until well blended.
- Pour into large (13 x 9-inch) glass pan and chill until firm.
- Serves 8 to 10.
