Curry Glaze Chicken Recipe
- 1 med. onion, minced
- 6 bacon sliced, diced
- 1 tbsp. curry pwdr
- 1 tbsp. sugar
- 1 can condensed beef broth
- 2 tbsp applesauce
- 2 tbsp. flaked coconut
- 2 tbsp. catsup
- 2 tbsp. lemon juice
- 8-10 chicken breasts/thighs, skinned
- 8 tbsp. flour
- 1 1/2 teaspoon salt
- 1 teaspoon ginger
- 3/4 stick butter, melted
- Coat chicken with a mix of 6 Tbsp.
- flour, salt, and ginger.
- Roll in butter.
- Place in pan.
- Combine 2 Tbsp.
- flour with remaining ingredients; heat to boiling stirring constantly.
- Simmer for 15 min stirring of 10.
- Bake chicken uncovered at 400 degrees for 20 min; baste with half of curry sauce.
- Bake another 20 min; pour remaining curry sauce on chicken.
- Bake additional 20 min.
- Serve with rice and desired condiments.
- Yields 8 servings.
