Kachumbar (Relish)
- 2 cucumbers, peeled and cut into 1/4-inch cubes
- 1 cup roasted chickpeas (daalia), coarsely crushed in blender or food processor
- 1 teaspoon salt, if desired
- 5 tablespoons lime juice
- 2 tablespoons sugar
- 1 cup coriander leaves
- 2 small fresh hot green chilies, each about 2 inches long, trimmed and finely chopped
- Combine all ingredients in mixing bowl and serve.
