Super Easy Festive Namasu (Pickled Daikon and Carrots)

  1. Peel the daikon and carrot.
  2. Use a slicer or peeler to thinly julienne.
  3. Otherwise, use a knife.
  4. Sprinkle the salt on the julienned daikon and carrot; this should draw the moisture out of them.
  5. Combine the vinegar and sugar, drain the excess moisture from the daikon and carrot, then soak in the vinegar and sugar mixture.
  6. Sprinkle on sesame seeds to taste; this makes the dish aromatic and tasty.
