Nif's Roasted Grape Tomatoes (Try Them on the Barbecue!)
- 4 -5 cups grape tomatoes
- 2 -3 garlic cloves, chopped or sliced (or more if you love garlic!)
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon ground sea salt (to taste)
- 1 teaspoon fresh ground black pepper (to taste)
- Preheat oven to 400F.
- Mix tomatoes, garlic,and olive oil in a bowl.
- Sprinkle with salt and pepper, to taste.
- Place tomatoes in a baking dish large enough for the tomatoes to be in 1 layer.
- Do not overcrowd!
- Roast for 20 minutes, and then stir.
- Add water if the tomatoes are too dry.
- Bake for 20 to 30 more minutes.
- You will know that the tomatoes are done when they have just begun to shrivel and the liquid in the dish is a bit thicker.
- The skins should have split a bit too.
- Serve immediately.
