Roasted Beets & Carrot Spinach Salad

  1. Heat oven to 425 degrees F.
  2. Mix oil and ginger.
  3. Add to combined beets and carrots in medium bowl; mix lightly.
  4. Spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
  5. Bake 40 to 45 min.
  6. or until vegetables are tender.
  7. Cool.
  8. Cover platter with spinach; top with cooked vegetables and remaining ingredients.
