Creamed Corned Muffins Recipe

  1. Heat oven to 425 degrees.
  2. Grease 12 (2 1/2") muffin c..
  3. In a large bowl mix flour, cornmeal, sugar, baking pwdr, salt and baking soda.
  4. Cut in butter with pastry blender or possibly rub with fingers till mix resembles coarse crumbs.
  5. In a large measuring c. mix buttermilk, egg and corn.
  6. Stir into flour mix just till moist.
  7. Spoon into prepared muffin c..
  8. Bake 20 to 25 min or possibly till golden brown and knife inserted in enter comes out clean.
  9. Let cold on rack 5 min before removing from pan.
  10. Makes 1 dozen.
