Creamed Corned Muffins Recipe
- 1 c. all purpose flour
- 1 c. yellow cornmeal
- 2 tbsp. sugar
- 1/2 teaspoon salt (opt.)
- 1 1/2 teaspoon baking pwdr
- 1 (8 1/4 ounce.) can cream style corn
- 1/4 teaspoon baking soda
- 2 tbsp. cool butter, cut in pcs
- 2/3 c. buttermilk
- 1 egg
- Heat oven to 425 degrees.
- Grease 12 (2 1/2") muffin c..
- In a large bowl mix flour, cornmeal, sugar, baking pwdr, salt and baking soda.
- Cut in butter with pastry blender or possibly rub with fingers till mix resembles coarse crumbs.
- In a large measuring c. mix buttermilk, egg and corn.
- Stir into flour mix just till moist.
- Spoon into prepared muffin c..
- Bake 20 to 25 min or possibly till golden brown and knife inserted in enter comes out clean.
- Let cold on rack 5 min before removing from pan.
- Makes 1 dozen.
